There's no great secret to making this simple dessert, but it does require a little more than just adding some cream to strawberries to get the taste that most people know and love. Here's the classic way to make this dish:
The first thing to do is to cut the strawberries in half. Next, you need to decide if you prefer whipped cream or liquid cream to go with your strawberries. If you want liquid cream, just add the vanilla and sugar to the cream; stir them together; pour them over your strawberries; and you're done! If you like strawberries and whipped cream, then first whip the cream until it starts to firm up. After the cream begins to become stiff, stir in the sugar and vanilla extract, and finish whipping the cream mixture until it becomes truly stiff. Spoon the strawberries and cream into the serving dishes in alternating layers, and enjoy! Strawberries and cream is one of the oldest strawberry dishes. It dates back to at least the mid-16th century, since it is mentioned by the English physician Andrew Boorde in his The Fyrst Boke [First Book] of the Introduction of Knowledge, which was released in 1542 (click here to open a new window with the book: the word "strawberyes" is found on page 267, under the paragraph "Of Crayme"). Dr. Boorde claimed personal knowledge that the dessert "...hath put men in ieoperdy of theyr liues [jeopardy of their lives]", which was likely due to the fact that the cream was "rawe" [raw] and therefore unpasteurized. Whatever the cause might have been, strawberries and cream did not disappear forever from England. In fact, it is likely that the largest and best known strawberries and cream "festival" in the world happens in England. And what is the name of the "festival"? It's the Wimbledon tennis tournament! Eating the fresh, in season berries along with cream is a grand tradition of the event, and several metric tonnes of it are eaten there each year! Something fun for all of us strawberry lovers to see (and taste!) whenever we get a chance!
