Strawberry Glaze Topping Recipe
- 1/2 Cup (125 mL) Strawberry Juice
- 1 Cup (250 mL) Water
- 1/2 Cup (125 mL) Granulated White ("Table") Sugar
- 2 Tablespoons (30 mL) Cornstarch
- 2 Tablespoons (30 mL) Lemon Juice
You can extract strawberry juice with instructions from the site for the National Center for Home Food Preservation, on the webpage you reach when you click here (a new window will open). Since the page was written for making jelly rather than glaze, please ignore the comments on that page about ripeness and use 100% ripe (or nearly ripe) strawberries. A single cup (250 mL) of fresh strawberries should be enough.
After you have your strawberry juice, pour it into a pan, and add the water, sugar, and lemon juice. Next, stir these over medium heat until the sugar dissolves completely. Once the sugar is dissolved, reduce the heat to low and slowly begin adding the cornstarch, stirring constantly. If any cornstarch lumps form, mash them between your stirring spoon and the side of the pan, and stir the mashed material back into the mix. After all of the cornstarch has been added and there are no cornstarch lumps remaining, remove the glaze from the heat and allow it to cool off before using it.
The glaze can be used as soon as it is cool enough, or it can be poured into a container and refrigerated for up to a week (frozen for up to a year). Makes about 2 cups (500 L).
