Whether it's an after meal desert, a snack, or a little something for guests to enjoy, cookies are sure to please... especially when they are full of buttery, strawberry goodness! And this homemade strawberry shortcake recipe for cookies is relatively easy to make, too! Here's how:
Begin by melting the butter, then mixing it with one of the eggs, the milk, the vanilla extract and the lemon juice. Next, add in the sugar and the baking powder. Lastly, add the flour, a little at a time, until all of it has been mixed in. That's all it takes to make the cookie dough. To form the cookies, divide the dough in half. Roll out half the dough and cut it into circles with 2 1/2 or 3 inch (6 to 8 cm) cookie cutters (drinking glasses with similarly sized mouths will also work just as well). The second half of the dough is used to make the sides of the cookies. This can be done in a couple of ways. The quickest way is to simply roll the dough into cylinder shapes about 1/2 inch (1 1/4 cm) in diameter. The other way is to place the dough into a piping bag and pipe it out using a star-shaped tip, as with the cookies in the photograph above. Whichever way you choose, place the dough on top of the cookies and go around the cookies' edges to form rings on top of the cookies. Cut the dough to the necessary lengths, then "glue" the lengths to the tops of the cookies using the egg whites from the two remaining eggs. This is done by simply brushing egg white lightly onto the top of the cookies' edges and the bottom of the dough rings, then placing the rings back onto the cookies' tops. To bake the cookies, pre-heat the oven to 350 degrees Fahrenheit (180 degrees Celsius), and place the cookies onto a cookie sheet that has been lightly coated with cooking oil or baking spray. Bake the cookies for about 5 minutes, or until the cookies barely begin to brown, then remove the cookies from the oven. At this point, spoon about 1 tablespoon (15 mL) of the strawberry jam into the center of each cookie. Finally, return the cookies to the oven for 2 to 3 minutes, or until the cookies turn a nice, golden brown. And enjoy your cookies!
